How baking percentage works (and why it is crucial)

In pizza, it's the proportion that counts. Therefore, the base is100%flour, and the rest of the ingredients are the percentage of this flour: hydration (water), salt, olive oil, sugar and yeast. This allows you to scale the recipe up and down without messing around. You just change the flour or the number of pizzas - and the rest takes care of itself.

Example "by feel": if you set hydration to 65% and flour to 1000 g, the water will be 650 g. Salt 3% is 30 g. Simple. And if you do twice as much in a week, the calculator will do the same, only faster and without mistakes.

Hydration: This One Slider Changes Everything

Hydration (i.e. the amount of water) is the biggest lever for flavor and texture. This changes how the dough is kneaded, how it "works" in fermentation and how it behaves in the oven. Too low - hard, roller, low elasticity. Too high - beautiful edges, but the dough can be sticky and requires technique.

If you choosewhole wheat flour, treat hydration as a different world. This flour absorbs more water and is usually better if you start with ~70% (and sometimes higher). You will also receive a warning in the calculator if you set hydration too low for whole grain.

Yeast, time and temperature: why "a little yeast" is a bad plan

In many recipes, yeast is given "by eye" (e.g. "half a cube"). Problem: Yeast works depending on time and temperature. Here, the calculator calculates their number as a percentage, based on how many hours you ferment at room temperature and how many in the refrigerator. This makes it easier to maintain control: the dough will not pop after 12 hours and will not be "dead" after 24 hours.

Preference: biga and poolish without chaos

If you want to go a level higher (taste, aroma, structure), the preferences are great, but they can mix up the proportions. Therefore, the calculator breaks the recipe into two steps:preferment i actual dough. You receive separate grams of flour/water/yeast for biga or poolish and what needs to be added in the final mixing.

To be clear: preference is not mandatory. If you make pizza during the week and you just want a good, repeatable dough - the direct method will be enough. Treat preference as a "premium taste" mode when you have time and want to have some fun.

Schedule: when to start to eat at a specific time

What I like most about this tool is that it works like a "pizza alarm clock". You set the time of eating (e.g. 7:00 p.m.), enter the fermentation time at room temperature and in the refrigerator, and the calculator suggeststime to start mixing. This way you stop guessing and don't end up with a cake that "should be ready" but isn't ready yet.

Of course, the kitchen is not a laboratory: yeast lives, temperatures fluctuate, and refrigerators can have different real °C. But having a specific start time is still a huge advantage over doing everything "around the afternoon."

Classic Neapolitan dough has only four ingredients: flour, water, salt and yeast - but the proportions must be precise. The reference point is always the weight of flour (100%). Hydration, i.e. the ratio of water to flour, for Neapolitan pizza is usually60-65%: lower results in a dough that is easier to shape, higher - a fluffier, bubble-like edge. Salt is added in an amount of 2.5-3% of the weight of the flour, and surprisingly little fresh yeast: for fermentation for 8-24 hours at room temperature, 0.1-0.5% is enough.

A standard ball of dough for one Neapolitan pizza weighs250 gand produces a cake with a diameter of approximately 30-32 cm. With 62% hydration, one ball contains approximately: 151 g of flour, 94 ml of water, 4.5 g of salt and 0.3 g of fresh yeast. Values are rounded; for instant yeast, divide the amount by 3 (e.g. instead of 1.2 g of fresh yeast - approx. 0.4 g of instant yeast). If you plan on longer cold fermentation in the fridge, you can stick with the same amount of yeast - the cold will naturally slow down the dough.

FAQ – questions that are actually asked when making pizza dough

Is the calculator good for Neapolitan at home?

Yes, and it is at home that it usually makes the biggest difference. Neapolitana baked in a 250°C oven is a compromise, so the repeatability of the dough is even more important. Set the oven type to domestic, select hydration around 60-65% and do not overdo the yeast during long fermentation. Treat the result as a basis: after 2-3 bakings, you will know whether you prefer a slightly softer dough (more water) or a more firm dough.

What ball weight should I choose?

It depends on the diameter and style. If you are aiming for the classic, home-made 28-30 cm, 230-260 g often works. If you like a larger edge and a thinner center, or you simply make larger pies, you can go with 260-290 g. The calculator helps in that regardless of the ball's weight, you get a consistent recipe - and you only choose the "pizza format".

What if I only have regular 450-550 flour, no type 00?

This can absolutely be done. Set the flour type to "450-550" in the calculator and watch out for two things: don't delay the fermentation if the flour is weaker, and don't go for very high hydration right away. For many regular household flours, 60-65% is a safe range. If you want to ferment for 24-48 hours, it is better to look for stronger flour - but this is not an obligation to start with.

Why does the calculator show very little yeast?

Because with long fermentation and reasonable temperature, the yeast does not have to be "forced". A small amount gives smoother operation, better control and often a cleaner taste. If you see values ​​like 0.3-0.8 g for fresh yeast, this may still be correct - only then is an accurate scale actually useful. If you prefer it simpler, you can switch to dry yeast and also stick to the conversions.

Are macros and kcal "for sure"?

These are approximate values, calculated based on simplified assumptions (typical calories and macros for flour, olive oil and sugar). In practice, flours differ in protein and calorie content, and you can add flour when forming them. Treat it as an approximation for comparison (e.g. "this version has more calories"), not as a down-to-gram calculation.

What does preference give you and is it worth using?

Preference (biga/poolish) can give a deeper aroma, better structure and a "more bakery" character of the cake. It's worth it if you have time, like experiments and want to get the most flavor from the flour. It's not worth it if you're making a quick pizza and just want a certain result. The good news: the calculator shows the division into preference and actual dough, so you don't have to calculate the proportions yourself.
