What is the difference between instant and regular oats?
The difference lies in the degree of processing of the oat grain. Regular flakes are made from whole grain and require cooking (approx. 10-15 minutes). Mountain flakes are made from chopped grain, they are thinner and you only need to boil them for 3-5 minutes. Instant flakes are additionally subjected to hydrothermal treatment (steaming), making them very soft and just pour hot water over them. Regular and mountain flakes have a lower glycemic index and are more filling than instant flakes.
What is the glycemic index (GI) of oatmeal?
Dry or briefly soaked mountain oat flakes have a low glycemic index (GI approx. 50). Cooking the flakes into a soft paste increases their glycemic index to a medium or even high level (GI approx. 65+). To maintain a low glycemic index, it is best to pour cold water or milk over the cereal overnight and eat it cold (so-called overnight oatmeal).
Is oatmeal gluten-free?
Oats naturally do not contain gluten proteins, but they do contain avenin, which does not cause an allergic reaction in 95% of celiac disease patients. However, on conventional farms, oats are grown, harvested and transported with the same machines as wheat or rye, which is why they are highly contaminated with gluten. People with celiac disease and severe intolerance must buy cereals certified "gluten-free" (with the symbol of a crossed ear).
Oatmeal with milk or water – which is a better choice?
Water-based oatmeal has fewer calories, which makes it easier to lose weight. In turn, oatmeal made with milk (cow's or soy) provides high-quality protein and calcium. In addition, the presence of milk protein and fat lowers the glycemic load of the entire meal, which ensures a more stable energy level and eliminates sudden hunger 2 hours after breakfast.
