The main division of ice cream concerns the base from which it is prepared, which directly determines its macronutrient profile:
- Milk, cream and cream ice cream:Their base is milk, cream or butter. They are high in saturated fat and sugar, which gives them a creamy consistency. They provide a large dose of calcium and milk protein. Their calorie content ranges from 180 to even 300 kcal per 100g (depending on additives such as caramel, chocolate or nuts).
- Fruit sorbets:Made from frozen water, fruit (purees or juices) and sugar. They do not contain fat, so they are much lower in calories - on average 100-120 kcal per 100g. However, it should be remembered that sorbets contain almost the same amount of simple sugars as traditional ice cream, which is why they have a higher glycemic index and are less filling.

The myth about negative calories in ice cream – how much truth is there in heating food?
An often repeated theory is that because ice cream is very cold, our body must use a lot of energy to heat it to body temperature (36.6°C), which supposedly reduces its caloric value. From the point of view of physics and thermodynamics: heating 100g of ice cream at -5°C to body temperature requires the body to expend only about 5-8 kilocalories (kcal). Compared to the 220 kcal these ice creams provide, the energy expenditure on heating is negligible and amounts to only 3% of the energy of the dessert. Ice cream certainly has no negative calories.
