Do not fry in ordinary extra butter at high temperatures or for a long time. It contains proteins and water that burn at temperatures of approximately 150°C (low smoke point), creating harmful carcinogenic compounds. Ordinary butter is only suitable for short frying over low heat (e.g. scrambled eggs).
