The intense orange color of carrots is due to plant pigments from the carotenoid group. Carrot is one of the richest sources of these health-promoting compounds:

Effect of cooking on the glycemic index (GI) of carrots
There is a lot of controversy around cooked carrots related to their glycemic index. Fresh raw carrots have a very low glycemic index (GI approx. 16-20). When cooked, the starch breaks down, which makes it easier to digest - the glycemic index of cooked carrots increases to approximately 35-39. However, this is still a low value! More importantly, the glycemic load (GL) of one cooked carrot is only about 1-2 because it contains very few carbohydrates per serving. Therefore, cooked carrots are 100% safe for people with insulin resistance and diabetes.

Are cooked carrots fattening and should diabetics avoid them?
No, boiled carrots do not make you fat. Its caloric value is only 35 kcal per 100g. Even though cooking increases its glycemic index to approximately 39, its glycemic load remains very low. People with diabetes and insulin resistance can eat it safely.
Why is it worth eating carrots with a little fat?
Carrots are rich in provitamin A (beta-carotene), which is a fat-soluble vitamin. Adding a drop of olive oil, a bit of butter to a dish with carrots or eating it with nuts increases the absorption of beta-carotene by the body many times.
Is drinking carrot juice as healthy as eating carrots?
Carrot juice provides many vitamins, but it is devoid of dietary fiber, which remains in the pomace. The juice has a higher glycemic index, raises blood sugar levels faster and satisfies less than eating a whole, raw carrot.
Can you overdose on carrots and change your skin color?
Yes, excessive consumption of carrots (especially drinking carrot juice every day in large quantities) can lead to the so-called carotenodermia. It is an asymptomatic and completely reversible yellowing or orange discoloration of the skin (most visible on the hands and feet), caused by the deposition of excess beta-carotene in the stratum corneum of the epidermis.
