What if the scale stays on despite the deficit?

The most common culprits are: underestimating portions, "snacking", liquid calories, water fluctuations (salt, cycle), or too short an observation period. Look at the trend over 2-3 weeks, not individual days.

Which plan should I choose if I want to lose weight in a healthy way?

A "light reduction" is usually a better choice - it's easier to maintain it and save energy for training. If you need a faster effect for a short period of time, you can consider "cutting down", but with greater control of regeneration.

Do I have to count macros to the gram?

No. Consistency throughout the week has the biggest impact. Treat macros as a framework: watch your protein, keep fats to a reasonable minimum, and adjust carbs to your training and goal.

Why does Katch-McArdle require body fat?

Because this method is based on lean body mass. If the BF% is wrong, the result may be less accurate than Mifflin. Only choose Katch if the BF% is reliable.
