The "conditions" column is not decoration: the same time on a different start gives a different result. The table clearly states whether the soft-boiled egg should be placed in cold or boiling water, whether the pot is covered and how much water should be above the product. Time without these conditions means nothing.
Cold water or boiling water - and when to add salt
The start has two meanings. Putting it incoldwater equalizes the temperature throughout the volume and works well where the center is far from the surface - otherwise the edge will fall apart before the center softens. Throwingintoboiling water gives a shorter and more repeatable time, because the countdown starts from a known temperature. For soft-boiled eggs, the correct start is given in the "conditions" column for each variant separately, because different methods start differently.
Salt raises the boiling point almost insignificantly (a few hundredths of a degree per tablespoon per liter), so it does not shorten the cooking time. It is important for taste and texture: salted legumes harden at the beginning, so salt is added at the end.
How to tell when a soft-boiled egg is ready
- The shell dries out quickly after being removed - this is a sign that the egg is hot through and through.
- After cutting the top, the yolk flows out in a thick drop, and does not spread like water.
- A soft-boiled egg twisted on the counter spins unstablely and quickly stops, while a hard-boiled egg spins evenly.
These indicators override the watch. The watch tells you when to start checking; the fork, knife and appearance tell you when to remove from the heat.
Common mistakes when boiling eggs
- Counting the time from adding cold water, not from boiling it - the difference is 6-8 minutes.
- Pot too small: a few eggs thrown into a small volume of water reduce the temperature and take longer to cook.
- No tempering after cooking - the egg is cooked with residual heat for another 1-2 minutes.
What moves the time: size, quantity, equipment, height
- Egg starting temperature (refrigerator or counter) - about 1 minute difference.
- Egg Size: S/M/L/XL is a difference of approximately 30 seconds per class.
- Freshness: Very fresh eggs have firm whites and take slightly longer to set.
The amount in the pot depends on temperature, not mass: pouring a large portion into a small amount of boiling water lowers the temperature and the water must return to a boil before the time in the table takes effect. Therefore, when making a double portion, it is better to use a larger pot and more water than to add minutes blindly. Start the countdown from the moment you return to the boil, not when you add the eggs to the water.
Water boils at 100 °C only at standard sea level pressure. The boiling point drops by about 1 °C for every ~300 m of altitude, so in Zakopane (≈850 m) water boils at ≈97 °C, and on Kasprowy Wierch (≈1987 m) at ≈93 °C. Lower temperature means longer cooking time: in the mountains, add about 5-10% of the time for every 500 m, and even more for legumes.
Food safety
The soft-boiled egg is not fully overheated: the yolk remains liquid, i.e. it does not reach the temperature at which Salmonella is killed. Food safety guidelines state that eggs should be cooked until the whites and yolks are set, and for egg dishes at an internal temperature of 71°C. This especially applies to eggs given to children, pregnant people, seniors and people with weakened immunity.
