How to tell if hard-boiled egg is ready

  • Spun on the worktop it turns smoothly and for a long time, like a top.
  • Cut open, the yolk is matt and uniform, with no moist, darker centre.
  • A grey-green ring around the yolk means the egg cooked several minutes too long.

Common errors

  • Boiling hard the whole time - the shells crack as the eggs knock against the bottom.
  • Skipping the cold-water shock: the egg keeps cooking and the membrane sticks to the white.
  • Dropping cold eggs into violently boiling water without pricking the blunt end - more cracks.

What changes the time

  • Egg size: XL requires about one minute longer than M.
  • Number of eggs: adding multiple eggs at once lowers water temperature for over a minute.
  • Altitude above sea level (a lower boiling point).

Water boils at 100 °C only at normal pressure at sea level. The boiling point drops by roughly 1 °C for every ~300 m of altitude, so at 850 m water boils at about 97 °C, and at 2000 m at about 93 °C. A lower temperature means longer cooking: in the mountains add roughly 5-10% to the time for every 500 m, and more than that for pulses.

Salt raises the boiling point by an amount that is practically irrelevant (a few hundredths of a degree per tablespoon in a litre), so it does not shorten cooking. It matters for taste and texture: pulses salted at the start turn hard, which is why salt goes in at the end.

Cold water or boiling water - and when to add salt

The start has two meanings. Putting it incoldwater equalizes the temperature throughout the volume and works well where the center is far from the surface - otherwise the edge will fall apart before the center softens. Throwingintoboiling water gives a shorter and more repeatable time, because the countdown starts from a known temperature. For hard-boiled eggs, the correct start is given in the "conditions" column for each variant separately, because different methods start differently.

Salt raises the boiling point almost insignificantly (a few hundredths of a degree per tablespoon per liter), so it does not shorten the cooking time. It is important for taste and texture: salted legumes harden at the beginning, so salt is added at the end.

The amount in the pot depends on temperature, not mass: pouring a large portion into a small amount of boiling water lowers the temperature and the water must return to a boil before the time in the table takes effect. Therefore, when making a double portion, it is better to use a larger pot and more water than to add minutes blindly. Start the countdown from the moment you return to the boil, not when you add the eggs to the water.
