The nutritional values and properties of cucumbers change dramatically depending on the way they are processed:
- Fresh cucumber (raw):It is the best for hydration, is crunchy and refreshing. It has a low glycemic index (GI = 15). It should be eaten with the skin (after washing thoroughly), because it is in it and directly beneath it that the most fiber and minerals are concentrated.
- Pickled cucumber:Produced in the process of lactic fermentation. The caloric value drops even more (to approximately 11 kcal per 100g) because lactic acid bacteria consume the natural sugars contained in the vegetable. Pickled cucumbers are a powerful natural probiotic that supports intestinal microbiota, immunity and digestion. However, they contain a large amount of sodium (from salt), which should be taken into account by people with hypertension.
- Pickled cucumber:Prepared in vinegar marinade with added sugar. Due to the addition of sugar, its caloric value increases to approximately 23-30 kcal per 100g. Vinegar may irritate a sensitive stomach, so pickled cucumbers should be eaten in moderation.

Cucumber contains the enzyme ascorbinase, which oxidizes vitamin C in other vegetables (e.g. tomatoes, peppers). This can be prevented by adding an acidic dressing based on lemon juice or vinegar to the salad, which neutralizes the effect of ascorbinase.
